Ingredients:
2 pounds fresh green beans
8 oz softened cream cheese
8 tablespoons (1 stick butter) melted
1/2 cup mayo
1 tablespoon garlic powder
1 teaspoon pink salt
3 pieces cooked bacon
1/2 cup shredded cheddar cheese
Topping:
1 cup keto breadcrumbs, recipe HERE
3 tablespoons dried minced onions or onion powder
Tools Needed:
Ice water
Large Bowl
7x11 glass basking dish
Cooking spray
Directions:
Preheat oven to 350 degrees Fahrenheit
Bring 6 cups of water to boil. Add in the green beans and boil for 3 minutes. Quickly remove and blanch in iced water to stop the cooking. Drain and set into a large mixing bowl.
Mix in the melted butter, softened cream cheese, and mayo. Add the seasonings and crumbled bacon.
Mix well.
Spray your glass casserole dish and pour the green bean mixture into it evenly. Spread out with a spatula to smooth.
Layer the shredded cheese on top.
Mix the breadcrumb mixture with the dried onions and sprinkle liberally on top of the cheese layer
Bake at for 35 minutes or until bubbling.
