LowCarb Stuffed Artichokes





These babies have been in our family faves for years! They were first introduced to me back when I started dating my husband. He's from Louisiana and there's so many good foods there I had no idea about!


I make them low carb by using ground pork rinds!


Here's my super simple recipe:


Ingredients:

2 medium artichokes

1 cup ground pork rinds

2 tablespoon olive oil

1 tablespoon mayonnaise

1/2 teaspoon pink Himalayan salt

1/2 teaspoon ground black pepper

1/2 teaspoon Cajun seasoning

Olive oil based cooking spray



Tools Needed:

Glass casserole dish

Aluminum Foil

Scissors



Directions:

Preheat oven to 375 degrees Fahrenheit. Trim the tips of your artichokes off, leaving them flat.

Spread the artichoke leaves open as much as you can with your hands, pushing them outward.

Trim the bottom off as well so the artichoke stands up flat on its own.


Set aside.


In a small bowl, combine the pork rinds with the mayonnaise. Drizzle the olive oil over the artichokes evenly. Season with the salt, pepper, and Cajun seasoning. Stuff the breadcrumb mixture into all of the opening between the artichoke leaves.


Wrap each artichoke in aluminum foil so it can be totally covered, with the opening at the TOP of the artichokes.


Pour water in the glass casserole dish, about 1" high. Set the sealed artichokes in the glass dish and place in the preheated oven in the middle baking rack.

Set the timer for 1 hour.


Remove and allow the artichokes to cool for approximately 10 mins before unwrapping them from the foil.


Serve with aioli, ranch, or eat as is!
