1 cup roasted salted almonds
1/2 cup coconut flour
12 tablespoons room temperature butter
1 cup powdered monkfruit, separated
3 egg yolks
1/2 tablespoon cinnamon
Preheat oven to 350 degrees Fahrenheit
In a food processor pulse the almonds until they resemble a “granola” like texture
Pour into a bowl. Add in coconut flour, 1/2 cup powdered monkfruit, and cinnamon and mix. Add in egg yolks, vanilla, and softened butter- mix well.
Like a baking sheet with parchment. Pinch off the cookie dough and roll into 1 inch sized balls, then roll into a log shape. Lay on the parchment and pinch an “arch” into them to create the crescent shape. Bake for 15 min. Cool and sift the remaining monkfruit powder over the cookies.
