
Ingredients:
1 head cauliflower, stem and leaves removed, and sliced in half
8 cups water
4 oz softened cream cheese
3 tablespoons sour cream
2 tablespoons butter, melted
1/2 teaspoon garlic powder
2 teaspoons pink Himalayan salt, separated
Directions:
In a large pot, bring the 8 cups of water to a boil. Add in the cauliflower head
carefully. Boil for 30 minutes or until soft and able to pierce easily with a
fork. Remove and place in a colander, sprinkle evenly with 1 teaspoon of the salt.
Allow cauliflower to drain and cool for approximately 10 minutes.
The salt pulls out excess water.
In a food processor, add in the cauliflower, cream cheese, sour cream, butter and
remaining seasonings. Begin to process on high. Pulse until a smooth consistency is reached.
Taste test, adjust seasonings if needed.
Enjoy and serve warm.
