I remember having a conversation with my dad a few months back where he told me they used to take the fresh coconuts in the Bahamas, slice them thin into "french fry" style and deep fry them, toss them in salt and they were amazing!
I found some fresh coconut in our local grocery store (Whole Foods carries this all the time by the way!) and I got to work putting my own spin on this idea! Check it out below:
Ingredients:
1 standard sized coconut, peeled, and diced into cubes
2 tablespoons of olive oil
1 tablespoon garlic & herb seasoning
1/2 teaspoon pink himalyan salt
1/2 teaspoon black pepper
Directions:
Line your airfryer with parchment paper. Toss the cubed coconut pieces in the olive oil, salt, garlic & herb seasoning, and pepper. Set the temperature to 350 for 6 minutes. Remove and toss them around. Air fry for an additional 6 minutes.
Enjoy!
Yields approximately 3-4 servings!
