Ingredients:
2 small red cabbage, or 1 large
1 large vidalia onion
2 jalapenos
3 tablespoons warm bacon grease
6 pieces cooked bacon, diced
1/2 tablespoon apple cider vinegar
2 teaspoons pink Himalayan salt
1 teaspoon garlic powder
Directions:
Preheat your oven to 350 degrees Farenheight.
Trim the tops off the two jalapenos. Lay them on a silicone baking lines sheet pan and roast for 30 minutes. Remove and allow to cool.
In the meantime you can prepare your cabbage to bake.
Slice the cabbage in half, removing the outer damanged leaves and cutting a "V" around the core on each side to remove it.
Slice 1/4" thick slices of the cabbage.
Peel your vidalia onion, slice in half and slice 1/4" pieces as well. In a large bowl, mix the cabbage an onion togther. Drizzle in the apple cider vinegar and warm bacon grease. Add in the salt and garlic powder and mix very well. In a deep baking dish (9x13) size works, line it with parchment paper and layer in the cabbage and onion mixture.
Slice the roasted jalapeno and mix it in along with the chopped bacon. Bake uncovered for 20 minutes. Top with foil after 20 minutes and continue to cook for another 20 minutes to soften the cabbage.
Serve hot.
