Yields approximately 2-1/4 cups of sauce
An easy pesto without the expensive pine nuts!
2 cups sliced almonds
2 cups fresh basil
1 cup extra virgin olive oil
5 cloves fresh garlic
1/2 yellow onion, peeled and sliced in half
1/3 cup grated Parmesan cheese (from the shaker type)
1 teaspoon pink Himalayan salt
In a food processor, add in the almonds, basil,onion, and garlic. Pulse until the almonds are finely ground and the mixture looks like a paste.. Add in the seasonings and pulse. Stream in the olive oil until thoroughly combined. Store in a glass container in the fridge up to 7 days.
Enjoy on your favorite protein or use in a salad or low carb pasta!
