Pesto Style Creamed Spinach


2 tablespoons bacon grease (or olive oil)

3 pieces of diced raw bacon

24 oz frozen spinach

1 medium yellow onion, diced

2 tablespoons fresh garlic, minced

1 tablespoon onion powder

1/2 teaspoon pink Himalayan salt

1/2 teaspoon cracked black pepper

8 oz softened cream cheese

1/4 cup sour cream

1/4 cup grated parmesan cheese

1/4 cup pesto (homemade or store bought)

2 egg yolks

4 oz fresh sliced mozzarella cheese

2 tablespoons pine nuts (optional)

Tools Needed:

7x11 baking dish

Cooking spray


Preheat oven to 350 degrees Fahrenheit

In a large pot over medium heat, melt your bacon grease and cook the bacon pieces in it.

Remove bacon pieces and set aside.

Add in your diced onions and minced garlic to the grease and cook down for approximately 5 minutes. Add in your frozen spinach, cover the pot with a lid.

In a food processor, combine the cream cheese, sour cream pesto, and parmesan cheese. Blend for 1 minute to combine well, set aside in a large mixing bowl.

Drain any excess water from the steamed spinach and remove from the heat.

Add in your seasonings to the spinach and onion mixture. Stir very well.

Add the spinach and onions to the cream cheese mixture and stir well.

Pour into your greased baking dish and top with the slices of fresh mozzarella cheese, diced bacon piece, and pine nuts.

Bake for 20 minutes

Serve hot and enjoy!

Serves approximately 8-10 guests
