Peanut Butter & Strawberry Chip Cookies (Keto, Lowcarb, Gluten Free)





Yields 12-14 cookies


Ingredients:

2 cups almond flour

1 tablespoon baking powder

1/2 cup Pyure sweetener

1 tablespoon unflavored gelatin powder (I use this brand HERE)

3 eggs

1 cup unsweetened natural peanut butter

1 cup ChocZero Sugar Free Strawberry chips (Discount code & link provided below)


Directions:

Preheat oven to 350 degrees Fahrenheit.

I made these using "muffin top" baking pan. I sprayed each cavity with cooking spray, picked out 2" size balls of the dough and pressed down into the cavity.

You can also use a traditional sheet pan>>

Line a baking sheet pan with parchment paper or use a silicone baking mat.

Mix all ingredients well. Scoop out into 2" round balls and space 2" apart on the sheet pan.

Bake for 12-15 minutes, depending on your oven. The cookie should be soft to touch.

Sprinkle the chips on top immediately. The warmth will cause them to melt into the tops.


Allow to cool completely (15 minutes minimum) before removing with a spatula.


Eat and enjoy
