Note- these can easily be done "dairy free" by subbing the heavy whipping cream for a non dairy milk. Be sure to use an unsweetened one to keep it lowcarb/keto. I opted to use Garlic & Herb seasoning but you could just use Garlic powder if that's all you have on hand, or omit completely if you plan to utilize these in a "sweet" application
Ingredients
2 cups almond flour
1/2 cup coconut flour
2 tablespoons baking powder
2 eggs, whisked
1/2 cup heavy whipping cream (you could also sub a non dairy milk here to keep it dairy free)
2 tablespoons olive oil
1 teaspoon pink Himalayan salt
2 teaspoons garlic and herb seasoning (not required but definitely makes them tasty!)
Directions:
Preheat oven to 350 degrees Fahrenheit.
Sift all dry ingredients together. Mix in the eggs, HWC, and olive oil evenly. Mix in the salt and garlic and herb seasoning. Using an ice cream scooper (or spoon) scoop out rounded spoonfuls of the dough about 2" in size. Roll evenly and place abour 2" apart on a parchment lined sheet pan. Flatten the tops down with your palm.
Bake for 20 minutes.
Allow to cool slightly and enjoy with some butter or whatever your heart desires!
