Keto/LowCarb Crispy "Fried" Chicken Breasts


4 boneless skinless chicken breast, split in half and pounded out thin

3 eggs

1/2 cup mayonnaise

2 tablespoons cajun seasoning

2 cups finely crushed pork rinds (run thru the food processor to achieve)


Crack eggs into food processor and add mayonnaise and cajun seasoning. Pulse until combined. Pour into a glass or stainless steel bowl and add chicken breast. Soak chicken breasts  in mixture for 2 hours in the refrigerator upwards to overnight.

remove and dip only one side into the crushed pork rinds. Place on a greased tray in your air fryer and bake at 400 degrees  for 20 minutes and enjoy!
