Ingredients:
2 cups almond flour
1 cup coconut flour
1 tablespoon baking powder
1 tablespoon unflavored powdered gelatin (I use this brand HERE)
1/4 cup Lakanto golden monkfruit sweetener
1/4 cup Pyure granulated sweetener
3 eggs, whisked
2 cup butter melted (sub with coconut manna if dairy free)
1 cup unsweetened almond butter, fluid
1 cup sugar free dark chocolate chips
Tools Needed:
9x13 baking dish
parchment paper
cooking spray
Directions:
Preheat oven to 350 degrees Fahrenheit.
Line your baking dish with parchment paper and grease well.
In a large mixing bowl, combine the almond flour, coconut flour, baking powder, gelatin, and both sweeteners. Pour in the melted almond butter, standard butter (or coconut manna), eggs, red velvet emulsion, and mix well.
Pour batter into the baking dish and even out with a spatula.
Bake for 20 minutes.
Remove from oven and immediately top with the chocolate chips so they can "melt" into the blondies.
Allow to cool, then slice into 3x3 squares.
Yields 15 servings.
