Keto Granola

Save yourself money and make your own! This makes a large batch. We love to use this just as is! Add in almond milk and some berries for a great cereal! Or make a yogurt parfait- the possibilities are endless!


Ingredients:


2 cups almond slices

2 cups walnut halves

2 cups pecan halves

2 cups pepitas

1/2 cup flaxseed meal

1 cup almond flour

1 cup brown sugar substitute (I used Lakanto Golden)

2 eggs, whisked

2 tablespoons ChocZero SF Maple Syrup (my affiliate link and discount code is below)



Directions:

Preheat oven to 350 degrees Fahrenheit. Using a food processor, pulse the pecans and walnuts until they look like a rough "sand like" texture.

Pour them in a large bowl. Add in the almond slices, pepitas, almond flour, flaxseed meal, and brown sugar substitute. Mix well. Pour in the eggs and mix evenly with your hands.


Use two sheet pans lined with parchment paper. Spread the granola out evenly on the two pans.

Use one tablespoons per sheet pan of the ChocZero maple syrup to drizzle over each granola sheet pan.


Bake for 20 minutes. When you pull it out of the oven, break it up slightly with a spatula or spoon into "bite sized" pieces. It may appear still wet, but it dries quickly once removed.


Allow granola to cool completely and keep in airtight container at room temperature for up to two weeks.
