Ingredients:
Dough:
1 batch everything dough
1/4 cup Pyure granulated sweetener
2 teaspoons vanilla extract
Filling:
16 oz frozen assorted berries (I had a bag of blueberries, strawberries, and raspberries)
2 tablespoons lemon juice
1/2 cup Pyure granulated sweetener
1 teaspoon xanthan gum
Egg wash:
1 egg
1/2 tablespoon purified water
1/2 tablespoon Pyure granulated sweetener
Tools Needed:
Medium sauce pan
Parchment paper
Silicone Baking Mat
Sheet Pan
Rolling Pin
Pastry Brush (or clean food safe brush)
Directions:
In a medium sauce pan, combine the filling ingredients and bring to boil. Reduce to low and allow to simmer for 15 minutes. Remove from the heat and set aside.
Lay the silicone mat down on your sheet pan, line with parchment paper, spray with cooking spray and set aside.
Work the dough into a ball with a well in the middle. Pour in the sweetener and vanilla, mix well and combine dough. Roll dough out into an oval like shape and then place it on the parchment paper.
Spoon out the filling into the middle, allowing 2" of space from filling to the edge of the dough. Fold the dough upwards to form a "rim" around the fruit, pushing it inward with your fingers.
Mix the egg and water for the egg wash together, and using a pastry brush brush all of the edges with the egg wash evenly. Sprinkle the 1/2 tablespoon of sweetener all over the areas that were egg washed.
Place in the middle rack of your oven and bake for 35 minutes, or until the edges are slightly browned.
Allow to cool completely.
Slice and enjoy.
