
These cuties are the perfect lunchtime treat, or even just to make to have on hand for a perfect single serve dessert!
Ingredients:
1 batch Keto Sugar Cookie Dough (click HERE for recipe)
1 tablespoon LorAnn Emulsion Cookie Butter flavoring (not needed but makes for extra tasty cookies)

Filling:
8 oz cream cheese softened
4 tablespoon butter softened
1/2 cup powdered monkfruit
2 tablespoons heavy whipping cream
Food Color (if desired)
Directions:
Preheat oven to 350 degrees Fahrenheit.
Prepare cookie dough according to directions. Roll out between two pieces of parchment paper to about 1/4" thickness.
Using a 1-1/2" circle cookie cutter, cut out cookies. The dough can be "re rolled" to form together again to get maximum use of cookies.
Layer cookies about 1/2" apart (they wont spread) on a silicone baking mat
Bake for 8-10 minutes. Testing doneness with your hand.
Allow to cool completely before frosting.
For Filling Directions:
Cream all ingredients togther in a stand mixer. Use a pastry bag to place frosting on one cookie, top with a secondary and sandwich together.
Keep all leftovers refrigerated.
Yields approximately 40 assembled 1-1/2" cookies
