10 mozzarella cheese sticks
2 whole eggs
1 tablespoon mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pink Himalayan salt
3 cups unseasoned pork rinds
In a bowl, whisk the eggs and add in the mayonnaise. Whisk well to incorporate. Set aside
Slice the cheese sticks in half. Soak them in the egg and may mixture for five minutes in the refrigerator.
In the meantime, pulse the pork rinds in a food processor until they are a fine crumb texture.
Place them in a shallow dish and mix in the onion powder, garlic powder, and salt.
Remove the soaking cheese sticks and roll them one by one in the pork rind mixture. Place them on a dish after they're coated and refrigerate for 10 minutes to allow the coating to stick very well.
Place in an air fryer for 6 minutes at 400 degrees.
Serve with marinara sauce and enjoy!
