Fried Keto Donuts





Makes approximately 10 donuts


I have a few different recipes on here for donuts, but I think this one is by far my favorite. Having a FRIED donut makes the flavor so much better to me LOL. I also use yeast in this recipe. It is activated by one teaspoon of honey. If you're worried about the sugar don't be - the yeast eats it.



Ingredients:

1 packet (7 grams) instant yeast

3 tablespoons purified water

1 teaspoon organic honey

1/2 cup Pyure granulated sweetener

1/4 cup heavy whipping cream

1/2 cup softened butter

1 tablespoon cinnamon

4 eggs

2 cups almond flour

1 cup coconut flour

2 tablespoon baking powder

1 teaspoon xanthan gum



For frying: 3 cups coconut oil

Tools needed (or advised to use)

Best if you have a slotted/fryer spoon

Donut pan to "shape" the dough



Directions:

Prepare the yeast. Using a glass jar, pour in the yeast packet, add in the teaspoon of honey and water. Stir and set aside while you prep the dough. You will see it begin to rise.


Using a stand mixer mix the butter and Pyure together until well combined. Pour in the vanilla and heavy whipping cream. Mix well.


In a large bowl, mix the dry ingredients together. Add in the creamed butter mixture and eggs. Now add in the raised yeast mixture and combine all ingredients well. Form into a ball, place it back in your stand mixer base, cover with saran wrap and refrigerate for 20 minutes.


Using a greased donut pan, shape the dough into donut shapes. You can pop these in the freezer for about 5 minutes to "firm up" and hold the shape.


In the meantime, heat the coconut oil in a small pot to medium high heat. Test the oil with a tiny pinch of the dough- it should raise right up and begin bubbling.

Lower each donut into the grease one at a time using the slotted spoon. They cook very quick, you need maybe 30 seconds the most on each donut. Keep the spoon in place so you don't loose the shape of the donut.

Lay each cooked donut on paper towel lined racks. Allow to cool.



Glaze:

I glazed these with melted white chocolate ChocZero chips and StokaBars keto friendly sprinkles!

1 tablespoon coconut oil

Directions:

Mix in a microwave safe bowl- heat for 30 second intervals and stir until melted (it took 1 minute in my microwave)

Dip each donut and top with sprinkles
