Ingredients:
1 cup Greek whole milk yogurt (I use 5%)
1/4 cup sour cream 1 English cucumber, remove all seeds 3 cloves fresh garlic
1/4 yellow onion, peeled and diced 1 teaspoon lemon zest
1 tablespoon fresh lemon juice 2 tablespoons chopped fresh dill Pink Himalayan Salt (to taste)
Pepper (to taste)
Directions:
Leaving the skin on, split the cucumber in half. Slice one half into 1/4" cubes and set aside. Grate the other half with a grater, Sprinkle with a touch of salt then lay the cucumber out flat on a few layers of paper towels and let sit while you prepare the other ingredients. You want to drain the excess water.
In your food processor, combine the greek yogurt, sour cream, onion, lemon juice, lemon zest, and garlic. Pulse until combined. Pour into a mixing bowl and add in the fresh dill, fold in the cucumber thats been drained and mix well. Fold in the cubed cucumber and season with salt and pepper as desired.
