Faux-Tato Salad (Keto/Low Carb)




Ingredients:

1 medium cauliflower

1 medium yellow onion

1/2 red onion

1 boiled egg

1/4 cup fresh parsley

1 cup mayonnaise

4 pieces cooked bacon

2 teaspoon pink Himalayan salt, separated

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika



Directions:

Trim the core out of the cauliflower and chop the florets down into bite size pieces. Submerge in a medium pot with water about 1" above. Add in 1 teaspoon of the pink salt, bring to a boil for 15-20 minutes (check doneness with a fork) Drain, and allow to cool completely (place in the fridge to speed this up)


Dice onion, eggs, and parsley. Also dice the bacon into bite size pieces. Add cauliflower into a large bowl, mix in mayo and all seasonings. Fold in the onion, bacon, and parsley. Mix well. Lastly fold in the chopped eggs.
