Easy Low Carb Vanilla Ice Cream
Here's an easy ice cream recipe that anyone can make! You don't need to have an ice cream maker, but it definitely makes a difference in preparation time.
1- 12 oz can coconut milk
1 cup heavy whipping cream
1/2 cup powdered sweetener of your choice (we used Lakanto)
3 egg yolks
1 vanilla bean (or 1/2 tablespoon of vanilla extract)
1 teaspoon vodka (helps reduce crystallization of ice)
Pinch of salt
Slice the vanilla bean open, and scrap the middle down with a spoon to release the seeds.
In a medium pot over medium heat, add in the coconut milk and heavy cream. Slowly stir in the sweetener, and whole vanilla bean with seeds (or vanilla extract).
Continue to stir for approximately five minutes.
Whisk the egg yolks in a medium size bowl. Add 1/4 cup of the warm cream mixure into the eggs and whisk well. This prevents the eggs from "scrambling" Pour the egg and cream mixture back into the pot and stir well.Add in the vodka at this time and reduce heat to low and continue to cook for an additional 5 mins.
Remove from heat and pour into prepared ice cream maker and follow instructions.
If not using an ice cream maker, you can pour this into a tempered glass dish and freeze for approximately 6 hours.
