Easy, Chewy, and Delicious Peanut Butter Cookies- Keto, LowCarb, Gluten Free

Yields 12-14 cookies


2 cups almond flour

1 tablespoon baking powder

1/2 cup Pyure sweetener

1 tablespoon unflavored gelatin powder (I use this brand HERE)

3 eggs

1 cup unsweetened natural peanut butter


Preheat oven to 350 degrees Fahrenheit.

I made these using "muffin top" baking pan. I sprayed each cavity with cooking spray, picked out 2" size balls of the dough and pressed down into the cavity.

You can also use a traditional sheet pan>>

Line a baking sheet pan with parchment paper or use a silicone baking mat.

Mix all ingredients well. Scoop out into 2" round balls and space 2" apart on the sheet pan. Press down with a fork in the traditional "criss cross" fashion if desired.

Bake for 12-15 minutes, depending on your oven. The cookie should be soft to touch.

Allow to cool completely (15 minutes minimum) before removing with a spatula.

Eat and enjoy
