My dad taught me a super simple trick years ago- add *just* a pinch of baking soda!
It ups the PH level and gets them carmelized in half the time! -
He was a world renowned Executive Chef for over 45 years, he even cooked for the Queen on her private plane. Fancy schmancy. He taught me so much!
This batch was 3 large onions peeled & sliced thin, 6 cloves of garlic, 2 tablespoons of olive oil and 1/8 teaspoon of baking soda!
Combine all in a medium sauté pan.
Cook over medium high heat for 10 minutes, then reduced to medium low for the remaining 10!
