Easy 7 Ingredient Low Carb Chicken Curry



So the definite key to round this all out is this *specific* curry powder. I've used SEVERAL different ones over the years, and even put my own together. To me- none come close. So this takes it to the next level for sure! You can buy it on Amazon and I know some local Caribbean groceries around here carry it so if you have one nearby it's worth checking it out!


Ingredients:

3 whole skinless boneless chicken breasts (6 individuals)

2 yellow onions

2 green bell peppers

3 cups plain 5% fat greek yogurt

1/2 cup heavy cream

2 tablespoons garlic powder

3 tablespoons curry powder

(Salt if desired)


Directions:

Slice your chicken breasts into 1" cubes. Peel and dice your yellow onions and place aside. De-vein and dice your green bell peppers. Grease deep dish style saute pan over medium heat. Add in the onions and chicken breast together. Cook down for about 7-8 minutes until the chicken begins turning white. Add in the bell peppers at this time and the heavy cream and all spices. Mix well. Stir in the greek yogurt and stir well to mix in any lumps. Allow to simmer for 20 minutes or until chicken is cooked throughly. Serve with caulimash, side salad, or just eat as is!
