Ingredients:
24 oz frozen broccoli florets
4 tablespoons butter, melted
1 tablespoon garlic powder
1/2 medium yellow onion, diced
1/2 cup ranch dressing of your choice
12 oz cream cheese, softened
2 whole eggs
3 cups shredded mozzarella cheese, separated
Salt & pepper to taste
Cooking spray or 1 tablespoon olive oil to grease baking dish
6 pieces bacon, cooked completely and diced
1 cup finely crushed pork rinds
Directions:
Preheat your oven to 350 degrees Fahrenheit
Grease a glass 9x13 baking dish.
In a large pan, defrost the frozen broccoli, and drain off the water.
Pat dry. Pulse in a food processor with the melted butter until the broccoli resembles a "rice" texture. Add in the softened cream cheese, 2 eggs, and ranch dressing and pulse until smooth.
Pour this mixture into a large bowl, chopped onion, and seasonings along with 2 cups of the shredded mozzarella.
Pour into the glass baking dish and smooth out.
In a small bowl, mix the remaining 1 cup of shredded cheese, chopped bacon, and crushed pork rinds. Top evenly and cover with foil.
Bake for 30 minutes then put to the top of your oven with the foil removed and broil for 3 minutes, until the top is brown and bubbly.
Serve hot!
