Sunday mornings we always try to sit and have a fun family breakfast. With my husband and I following a lowcarb/keto lifestyle it was a struggle to find a waffle recipe that my kids liked too!
They were always side eyeing what I made with the words "Is this keto??" Ha!
When I first went down the path of experimenting with dairy free, my "usual" waffle recipe had to go. So back to the drawing board!
It lead to lots of experimenting and then coming up with these, which also ended up being nut free! Serve them up with your favorite sugar free syrup, some fresh fruit, and enjoy!
Ingredients:
1 cup coconut flourÂ
1/4 cup melted coconut oilÂ
1 tablespoon baking powderÂ
1/4 cup coconut milkÂ
7 eggs, whisked Â
1 tablespoon vanilla extract
1/4 cup granulated sugar substitute of your choice (I use Pyure)
Directions:
Combine all ingredients. It will look like a thick batter, you want that! Distribute evenly in a greased waffle maker and cook accordingly.
