2 cups diced chicken breast (approx 1-1/2" size cubes)
2 cups diced baked ham (approx 1-1/2" size cubes)
2 tablespoons olive oil
1 cup greek yogurt
3 tablespoons heavy cream
1 cup shredded swiss cheese
1 tablespoon dijon mustard
1/2 yellow onion
2 cloves fresh peeled garlic cloves
2 teaspoons pink Himalayan salt
1 teaspoon coarse ground black pepper
1/2 teaspoon smoked paprika
Preheat oven to 350 degrees Fahrenheit
Grease a glass 7x10 casserole dish.
In a food processor, combine the greek yogurt, heavy cream, mustard, onion, garlic cloves and 1/2 cup of the shredded cheese.
Blend until fully combined. Set aside.
In a stainless steel bowl, mix the chicken and ham with the 2 tablespoons of olive oil. Evenly distribute the salt, pepper, and paprika. Layer evenly into the casserole dish. Top with the Greek yogurt mixture. Bake for 25 minutes, remove and top with the remaining shredded cheese,
Bake for another 20 minutes covered with foil.
Remove and enjoy!
