Cashew Chicken- Sheet Pan Meal (Keto, Low Carb)


2 pounds chicken breast, cut into 1-1/2" size cubes

3 medium sized bell peppers, washed and cut into 1-1/2" cubes - I used yellow, red, and green for color

8 cloves freshly peeled garlic

2 tablespoons sesame seeds

1 cup fresh green beans, washed and ends snipped

1 cup roasted cashews

1 tablespoon onion powder

1 tablespoon cajun seasoning


4 tablespoons apple cider vinegar

1 cup liquid coconut aminos

4 tablespoons brown sugar substitue (I used lakanto golden)

2 tablespoons hot sauce of your choice

2 tablespoon sesame oil

Whisk all ingredients together and set aside


Preheat oven to 350 degrees Fahrenheit. Grease a standard size sheet pan. Scatter the chicken pieces all over the pan. Place the green beans down next, top with the bell peppers.

Pour the sauce evenly over all ingredients. Place the garlic cloves around, followed by the cashews. Top all ingredients with the onion powder and cajun seasoning. Finally top with the sesame seeds.

Bake for 45 minutes. Check at 25 minutes, if the peppers are browning too quickly, loosely cover with foil and continue baking.

Serve with cauli rice if desired, or as is!
