Zucchini Baby Food Meal Prep
Yield approximately 24- 28 cubes
3 medium sized ripe zucchinis
2 - 3 ice cube trays
1 tablespoon pink Himalayan salt
Wash and slice zucchini into quarters. Place in a medium sized pot and add 1/2 cup of water. Cook over medium heat for approximately 25 minutes. Remove from heat and add salt and stir.
Pour into your food processor, and pulse until a smooth consistency is reached.
Pour contents into a large ziploc bag, and snip the corner tip off. Pipe into ice cubes and freeze overnight.
Remove cubes from trays and place into individual ziplocs for easy freezing.
Reheat approximately 30 to 45 seconds in the microwave and you're set!
