Easy LowCarb Breakfast- Frittata!




Frittatas make the perfect breakfast when you're entertaining, have a large family, or just want to make a great breakfast to prep for the week. You can also split this recipe into greased muffin tins and have "individual" breakfast frittata bites! Just reduce the cooking time as needed.


You can add in any vegetables or meat you like!

Here's my favorite combination of sausage, onions, and cheese!

  • 6 eggs, whisked just until the egg yolks and whites are blended

  • 3 tablespoons sour cream

  • 1 medium bell pepper, sliced thin

  • 1-2 green onions diced

  • 1 average size andouille sausage link (smoked so it's already cooked)

  • 1/2 cup shredded cheddar cheese

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Cooking spray



Directions:


Preheat oven to 350 degrees Fahrenheit. Spray a glass 8" pie pan generously.

Mix the sour cream and heavy whipping cream into the whisked eggs and set aside.



Put all of the onions, peppers, sausage, seasonings, and 1/4 cup of the shredded cheese into the pie pan.



Top with the egg mixture and remaining 1/4 cup of cheese.

Bake for 25 minutes, or until center is set.


Best served hot


Serves approximately 6-8 guests
